  • Salmon baguette with granadilla dressing

A bread roll with salmon is loved by many people, that's why we have made a fun twist to this classic recipe. Granadilla is a tasty sweet fruit and that particular sweetness combines really well with the salmon.

Ingredients

  • 2 EAT ME granadillas
  • 1 EAT ME lime
  • 5 g EAT ME coriander
  • 1 wholemeal french bread
  • 250 g smoked salmon
  • 40 g iceberg lettuce
  • 2 tbsp. capers
  • 1 red onion
  • 1 tbsp. honey
  • garden cress

Let's get to work

Preparation
  1. Rinse the lettuce and chop finely.
  2. Cut the onion into half rings.
  3. Cut the Granadillas in half and scoop out the flesh and place in a mixing bowl.
  4. Cut the lime in half and squeeze the juice from the fruit.
  5. Rinse the mint and coriander and chop finely.
  6. Make the dressing by whisking the granadilla flesh, the lime juice, the honey and coriander.
  7. Halve the baguette lengthwise and top with the lettuce and smoked salmon. Then divide the capers and onion rings on top and drizzle with the granadilla dressing.
  8. Add some watercress to the baguette.
