  • Salad with kumquats and avocado

A delicious colourful tropical salad.


  • 2 EAT ME avocados
  • 6 EAT ME kumquats
  • 2 blood oranges
  • 2 red grapefruit
  • 1 red onion
  • 125 gr mixed lettuce
  • 200 gr buffalo mozzarella
  • 75 gr pistachio nuts
  • Salad dressing


  • 1 punnet Brocco cress
  • 1 punnet Shiso purple cress

Let's get to work

  1. Peel the blood oranges and remove the white pith with a sharp knife and cut the fruit into thin slices.
  2. Peel the grapefruits and cut the grapefruit out of the membranes.
  3. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone and spoon out the flesh and slice thinly.
  4. Cut the red onion into half rings and the kumquats into thin slices.
  5. Put the mixed salad in a bowl and divide the blood orange, grapefruit, avocado, red onion and kumquats on top.
  6. Pluck off pieces of the mozzarella and place them on top of the salad. Sprinkle the salad with pistachio nuts.
  7. Sprinkle to taste with a salad dressing of your choice.
  8. Tip: optionally add Brocco cress and Shiso Purple cress to the salad.
