  • Salad with green mini asparagus and passion fruit dressing

Ingredients

  • 200 g EAT ME mini green asparagus
  • 2 EAT ME mangos
  • 100 g Parma ham
  • 100 g mixed lettuce

Dressing:

  • 4 EAT ME passion fruit
  • 1 EAT ME lime
  • 1 tbsp. honey
  • 1 tbsp. olive oil
  • salt & pepper

Let's get to work

Preparation
  1. Bring plenty of salt water to the boil. Blanch the green mini asparagus for 2 minutes and then rinse with cold water.
  2. Cut the mango along both sides of the stone or use a mango cutter. Use a melon baller to get balls from the flesh.
  3. Cut the passion fruit in half and scoop out the jelly-like flesh and put in a bowl.
  4. Add the juice of the lime, honey and olive oil and stir everything gently with a whisk. Season to taste with salt and pepper.
  5. Place the salad, mango balls, Parma ham and green mini asparagus on 4 plates. Drizzle the dressing over the salad.
