Do you sometimes feel like a different kind of salad? Then this salad with physalis berries, avocado and green mini asparagus is a good choice. You will find that the different flavours in this salad complement each other very well. The creaminess of the avocado, the freshness of the physalis berries and the nutty flavour of the mini asparagus. Nice and healthy!

Ingredients

  • 100 g EAT ME physalis berries
  • 1 EAT ME avocado
  • 100 g EAT ME green mini asparagus
  • 40 g cashew nuts
  • 50 g brie
  • ½ red bell pepper
  • 75 g mixed lettuce
  • 10 g salt
  • 2 tbsp. olive oil

Let's get to work

Preparation
  1. Preheat the oven to 200 °C.
  2. Rinse the green mini asparagus. Place the mini asparagus on a baking tray, drizzle with olive oil and sprinkle with sea salt.
  3. Grill the mini asparagus for 8 minutes in the preheated oven (turn over halfway) and leave to cool.
  4. Cut the bell peppers into thin strips.
  5. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Use a spoon to remove the stone. Spoon out the avocado and cut the flesh into strips.
  6. Cut the brie into thin slices.
  7. Rinse the physalis berries.
  8. Place the mixed lettuce in a bowl or on two plates.
  9. Divide the mini asparagus over the lettuce, then add the bell peppers, avocado, brie, the physalis berries and cashew nuts.
  10. A delicious dressing for this salad is an avocado dressing.
