It takes no time prepare this crispy salad with stir fried sugar snaps. Great for lunch or a light meal.

Ingredients

  • 150 g EAT ME sugar snaps
  • 150 g mixed salad
  • 60 g semi-dried tomatoes
  • 1 red onion
  • 1 red bell pepper
  • 400 g beef tenderloin
  • A dash of olive oil
  • 6 tbsp sesame oil
  • 2 tbsp vinegar
  • 2 tsp mustard
  • 2 tsp soy sauce
  • 2 tsp honey
  • 2 shallots
  • pepper & salt

Let's get to work

Preparation
  1. Make the dressing by slicing the shallot finely and mix with the other ingredients for the dressing.
  2. Stir fry the beef tenderloin for 5 minutes in a wok with olive oil, add the sugar snaps. Stir fry for another 2 minutes.
  3. Slice the red onion in thin rings and the bell pepper in thin strips.
  4. Combine the mixed salad, bell pepper, onion, the semi-dried tomatoes and the dressing together.
  5. Arrange the salad on 4 plates and top it off with the lukewarm stir fried beef tenderloin pieces and the sugar snaps.
