  • Salad of green asparagus and samphire

Surprise yourself and others with a delicious salad of green asparagus. Full of flavour due to the combination of samphire and mackerel.


  • 1 bunch of EAT ME green asparagus
  • 2 EAT ME limes
  • 20 g EAT ME ginger
  • 10 g EAT ME basil
  • 10 g EAT ME parsley
  • 3 tbsp. olive oil
  • 1 tbsp. soy sauce
  • 50 g of sun-dried tomatoes
  • 100 g of samphire
  • 2 tbsp. sesame seeds
  • 2 mackerel fillets
  • salt and pepper

Let's get to work

  1. Rinse the asparagus. Cut the ends (1-2 cm) off the asparagus. Grill the green asparagus and cut into large pieces.
  2. Use a stick mixer to mix the juice of 1 lime, freshly grated ginger, 2 tbsp olive oil, soy sauce into to a smooth dressing. Season to taste with salt and pepper.
  3. Cut the sundried tomatoes into pieces.
  4. Blanch the samphire and drain. In the meantime, finely chop the basil and parsley.
  5. Fry the sesame seeds in a frying pan until golden brown.
  6. Mix the salad with the sesame seeds, the sun-dried tomatoes together, the green asparagus, samphire, basil and parsley in a bowl.
  7. Heat 1 tablespoon of olive oil in a pan.
  8. Cut the mackerel fillets in half and fry the fish for 3 minutes on each side.
  9. Place the salad on the plates and put the fried mackerel fillet on top. Squeeze half a lime over each mackerel fillet. Season with freshly ground pepper.
