Use red currants to give the classic tiramisu a twist! Also ideal for those who don't like tiramisu. The tiramisu is even more delicious with the addition of white wine. If you prefer it without wine or you are eating it with children, just leave the wine out.

Ingredients

  • 375 g EAT ME red currants
  • 5 egg yolks
  • 100 g sugar
  • 100 ml white wine
  • 500 g mascarpone
  • 7 gelatine sheets
  • 600 g cream
  • 1 packet of ladyfingers
  • 2 tbsp. honey

Let's get to work

Preparation
  1. Separate the eggs yolks from the whites. Keep the yolks. Heat the egg yolks with 1/3rd of the white wine, stirring constantly. Remove the pan from the heat and whisk the mixture together with the sugar for about 5 minutes until fluffy.
  2. Meanwhile soak the gelatine sheets in the rest of the wine. Heat the white wine as soon as the gelatine is soaked and wait until it has dissolved. Add this to the egg mixture and then add the mascarpone and mix well.
  3. Whip the cream until it has a yoghurt-like consistency and gently fold into the mascarpone mixture. Set aside.
  4. Wash the red currants and strip the currants off the stems keep 1 stem for decoration. Mash the remaining red currants and add the honey to it.
  5. Take a bowl and start with a layer of lady fingers, spread half the mashed red currants and a layer of mascarpone mixture on top. Repeat this one more time.
  6. Leave the tiramisu to stiffen for at least one hour and decorate with a stem of red currants and maybe some other red fruits.
