  • Quinoa salad with pomegranate

Perfect as a main meal on its own.

Ingredients

  • 1 EAT ME pomegranate
  • 1 sprig EAT ME chives
  • 1 apple
  • ¼ cucumber
  • 80 g quinoa
  • 2 tbsp olive oil
  • ½ tsp mustard
  • 1 tbsp honey
  • pepper & salt

Let's get to work

Preparation
  1. Cook the quinoa according to the instructions on the packet and leave to cool until it's at room temperature.
  2. Dice the cucumber in small cubes. Peel the apple and also dice into small cubes.
    Chop the chives, finely.
  3. Cut the top of the pomegranate. Cut gently along the ridges from the top to the bottom.
    Open the pomegranate and remove the seeds and collect the juice.
  4. Make a dressing by mixing the olive oil, mustard, honey and the pomegranate juice in a separate bowl.
  5. Mix the quinoa, pomegranate seeds, apple, cucumber and the chives and add the dressing.
  6. Arrange the quinoa salad on 2 plates.
