A tasty Mexican pancake. Usually with lots of melted cheese in between. This is a healthy version of the Mexican snack. Give it a try!

Ingredients

  • 1 EAT ME mango
  • 4 tortillas
  • ½ red bell pepper
  • 300 g mini spinach
  • 150 g goat cheese
  • 1 tbsp. olive oil

Let's get to work

Preparation
  1. Cut the peppers into thin strips and wash the spinach.
  2. Heat the oil in a wok and stir-fry the red bell pepper for about 2 minutes. Add the spinach and cook for another 2 minutes. Remove from the pan and let it cool down.
  3. Cut the mango along both sides of the stone or use a mango cutter. Then cut some strips in the seedless flesh, without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango. Add the mango to the spinach and bell peppers.
  4. Carefully crumble the goat cheese through the spinach mixture and mix together.
  5. Place the mixture on two tortillas and place the other two sheets on top. Press gently.
  6. Place the filled tortillas on the barbecue (or in a hot frying pan) and cook for about 2 minutes on each side.
  7. Carefully remove the quesadillas from the barbecue and cut into wedges.
