This vegetarian pumpkin curry is made quickly and easily. A plate full of delicious ingredients!


  • 1 EAT ME butternut squash
  • 1 EAT ME cayenne pepper
  • 5 g EAT ME coriander
  • 1 onion
  • 2 cloves garlic
  • 250 ml coconut milk
  • 2 tbsp. yellow curry paste
  • 2 tbsp. olive oil
  • 300 g basmati rice

Let's get to work

  1. Peel the butternut squash and cut in half lengthwise. Remove the seeds with a spoon and then cut the butternut squash into cubes of 1 by 1 cm.
  2. Chop the onion and finely crush the garlic. Halve the peppers, remove the seeds and cut finely.
  3. Heat olive oil in a pan and fry the onion and the garlic. Add the butternut squash and fry it as well. Then add the curry paste and coconut milk and simmer for 30 minutes on low heat.
  4. Cook the rice according to the instructions on the package.
  5. Finely slice the coriander and add before serving. Serve the curry together with the rice.
