  • Potato salad with haricots verts

Enjoy this filling and healthy salad full of fresh ingredients.


  • 300 g EAT ME haricots verts
  • 300 g mini potatoes in their skin
  • 1 onion
  • 1 red bell pepper
  • 4 spring onions
  • 100 g cashew nuts
  • 2 tbsp. olive oil
  • 3 tbsp. homemade pesto, check out the recipe here
  • pinch of salt

Let's get to work

  1. Pre-heat oven to 200 °C.
  2. Rinse the haricots verts and cut the ends off.
  3. Cut the potatoes in half, sprinkle some olive oil and salt on them. Put the potatoes on an oven tray and bake for about 15 to 20 minutes until golden brown.
  4. Put water in a pan, bring to the boil and blanche the haricots verts for 3 minutes. Rinse with cold water immediately.
  5. Cut the onion, spring onion and bell pepper into strips.
  6. Make the pesto according to this recipe
  7. Mix the mini potatoes, the haricots verts, the onion, the bell pepper, the cashew nuts and 3 tablespoons of homemade pesto together.
