  • Pomegranate salad with mango and rocket

This salad is made in no time and also tastes delicious. The sweet taste of mango and pomegranate combines perfectly well with the creamy taste of feta.


  • 1 EAT ME pomegranate
  • 2 EAT ME mangos
  • 20 g pine nuts
  • 200 g of feta
  • 100 g rocket
  • 1 punnet garden cress
  • salad dressing

Let's get to work

  1. Toast the pine nuts in a dry frying pan until brown and let them cool down.
  2. Cut the mango along both sides of the stone or use a mango slicer. Then cut some strips in the seedless flesh, without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango.
  3. Cut the top off the pomegranate. Cut gently along the ridges from the top to the bottom. Open the fruit. Then remove the pomegranate seeds.
  4. Cut the feta into small cubes.
  5. Put the rocket in a bowl and add the mango cubes, feta cubes and pomegranate seeds.
  6. Cut off the cress and put on top of the salad.
  7. Sprinkle to taste with a salad dressing of your choice.
