  • Pomegranate salad with courgette noodles and gambas

Perfect for an Easter brunch! A refreshing salad with pomegranate seeds. The prawns and zucchini noodles give the salad an extra taste sensation.

Ingredients

  • 1 EAT ME pomegranate
  • 5 g EAT ME dill
  • 1 green courgette
  • 1 yellow courgette
  • 75 g mixed lettuce
  • 12 black tiger prawns
  • 1 clove garlic
  • 2 tbsp. olive oil
  • salt & pepper

Let's get to work

Preparation
  1. Slice the green and yellow zucchini lengthwise with a vegetable peeler. Then cut the long slices into long thin strips.
  2. Heat 1 tablespoon of olive oil in a frying pan.
  3. Fry the zucchini noodles al dente and season with salt and pepper. Then let it cool down.
  4. Cut the top off the pomegranate. Cut gently along the ridges from the top to the bottom. Open up the fruit. Then remove the seeds from the fruit and place in a bowl.
  5. Crush the garlic with a garlic press and finely chop the dill.
  6. Mix the prawns with the olive oil, garlic, dill, pepper and salt.
  7. Grill the prawns until done in a grill pan.
  8. Equally divide the mixed lettuce and courgette noodles into the glasses.
  9. Then equally divide the prawns and pomegranate seeds on top.
  10. Drizzle with a dash of olive oil.
