Enjoy this surprising tropical fish dish. The combination of these ingredients pleases the eyes and the mouth.

Ingredients

  • ½ Formosa papaja
  • 8 x pieces of frozen pollack (100 gram per piece)
  • 1000 g potatoes
  • 8 sprigs parsley (or chervil)
  • ½ onion
  • ½ red pepper
  • 50 g grated coconut
  • ½ tbsp cane sugar
  • ½ tsp sambal
  • 1 tsp salt
  • ½ tbsp sea salt
  • ½ tbsp ground paprika
  • ½ tbsp pepper
  • 3 cloves garlic
  • 100 ml olive oil (and a bit extra for greasing)

Let's get to work

Preparation
  1. Preheat oven to 160 °C.
  2. Peel and quarter the potatoes.
  3. Mix the potato wedges in a bowl together with the sea salt, the paprika, pepper, the crushed garlic and the olive oil.
  4. Place the potatoes on a greased oven tray and sprinkle with some sprigs of parsley.
  5. Bake the potatoes in the middle of the oven for about 20 to 25 minutes until done. Remove from the oven.
  6. Preheat the oven to 210 °C.
  7. Cut the Formosa papaya vertically in half. Spoon out the seeds and then cut the flesh into square blocks.
  8. Rinse the pepper and remove the skin from the onion. Cut the peppers and the onion finely.
  9. Combine the Formosa squares with the pepper and the onion in a bowl. Add the cane sugar, the sambal and the salt. Mix it all together.
  10. Place the pieces of fish on a greased oven tray. Divide the papaya mixture on top of the Pollack pieces.
    Sprinkle the grated coconut on the fish.
  11. Bake the fish for about 15 to 20 minutes.
  12. Finally place the baking tray with potato wedges back in the oven for about 5 minutes to warm them up again.
  13. Place a piece of fish on a plate with a spoonful of potato wedges.
