  • Poké bowl with green asparagus and salmon

Our favourite poké bowl is definitely this one with salmon and green asparagus. You can easily make it in half an hour.

Ingredients

  • 450 g EAT ME green asparagus
  • 250 g basmati rice
  • olive oil
  • 300 g cherry tomatoes
  • 4 eggs
  • 400 g fresh salmon
  • 50 g rocket
  • 2 tbsp sesame seeds
  • 4 tbsp. soy sauce
  • salt and pepper

Let's get to work

Preparation
  1. Preheat the oven to 220 °C.
  2. Cook the rice by following the instructions on the packet.
  3. Rinse the asparagus. Cut the ends (1-2 cm) off the asparagus. Place the asparagus on a baking tray and drizzle with 1 tablespoon olive oil. Sprinkle with salt. Grill the asparagus in the oven for about 7 minutes.
  4. Slice the cherry tomatoes in half.
  5. Boil the eggs for 6 minutes. Peel the eggs and cut into slices.
  6. Cut the salmon into 1 cm cubes.
  7. Equally divide the rice among 4 bowls.
  8. Then place the cherry tomatoes, green asparagus, salmon, eggs and rocket on top of the rice.
  9. Sprinkle some sesame seeds on top.
  10. Season the poké bowls with soy sauce und salt en pepper.
