How about changing the classic melon and ham entree a little? This pitahaya tower will do the trick. You can serve these nice and special snacks in no time.


  • 2 EAT ME ted pitahayas
  • 1 large Galia melon
  • 1 red bell pepper
  • 150 g prosciutto ham
  • 2 tbsp. honey
  • 1 tbsp. mustard
  • 2 tbsp. Olive oil
  • 6 torn bits of lettuce (garnishing)

Let's get to work

  1. Halve the melon and remove the seeds. Peel the fruit and cut in small cubes.
  2. Wash and cut the bell pepper in half, remove the seeds. Then cut the bell pepper in small pieces.
  3. Make a dressing by mixing the honey, olive oil and mustard. Combine the dressing with the melon and bell pepper pieces.
  4. Peel 1 pitahaya and cut in small slices. Cut the other pitahaya vertically in half and use a melon baller to make balls out of the flesh. If you don't have one, cut equal sized cubes out of the flesh.
  5. Use a small ring mold, fill it with the melon mixture and flatten it with a spoon, so you have a small tower.
  6. Use the same mold to cut a circle out of a slice of pitahaya. Place this round slice on the melon tower.
  7. Cut a piece of prosciutto in half and drape this on top of the round pitahaya slice. Top it off with the lettuce.
  8. Make 3 towers per plate. Lastly divide the balls (or cubes) of pitahaya in-between the towers.
