  • Pitahaya salad with turkey and coconut-curry mayonnaise

Are you ready to serve a special salad? With its exotic appearance the pitahaya will steal the show. By adding the coconut curry mayonnaise, you will create a surprising taste sensation.

Ingredients

  • 2 EAT ME red pitahaya
  • 1 head of chicory
  • 4 leaves Lollo Rosso
  • 4 Little Gem lettuce
  • 10 slices smoked turkey
  • 20 g pine nuts
  • 2 tbsp. mayonnaise
  • 1 tsp curry powder
  • 1 tsp grated coconut
  • salt & pepper

Let's get to work

Preparation
  1. Cut the pitahaya vertically in half, then cut into slices, or scoop out the fruit. The skin is not eaten.
  2. Rinse the chicory, Lollo Rosso and Little Gem. Cut the bottom of the chicory and use about 6 leaves.
  3. Make a sauce by mixing the mayonnaise, curry and grated coconut together. Season to taste with salt and pepper.
  4. Toast the pine nuts briefly in a hot frying pan until lightly browned.
  5. Divide the pitahaya pieces on 2 plates, arrange them in a fan-like fashion. Spoon a dollop of sauce into each opening.
  6. Drape the smoked turkey over the top and sprinkle with the pine nuts.
  7. Lastly, decorate using the Lollo Rosso, Little Gem and chicory leaves.
