  • Physalis muffins with physalis curd

Physalis berries are deliciously fresh and fruity. As such, they are perfect to use in muffins. The sweet muffin complements the slightly tart berries. We have used nutritious ingredients to make these muffins. That makes these muffins a healthy snack.

Ingredients

Muffin
  • 100 g EAT ME physalis
  • 120 g coconut sugar
  • 200 g flour
  • 200 g almond flour
  • 1 orange
  • 3 eggs
  • 1 tsp salt
  • 1 tbsp. baking powder
  • 1 tsp vanilla sugar
  • 250 ml milk
  • 120 ml sunflower oil
  • cinnamon

Physalis curd
  • 100 g EAT ME physalis berries
  • 75 g butter
  • 1 dl water
  • 50 g icing sugar
  • 1 egg yolk

1 tsp cornflour

Let's get to work

Preparation
  1. Start by making the physalis curd. Remove the papery husk of the physalis and rinse the berries. Heat the water in a saucepan and add the physalis, the butter and the icing sugar. Bring to the boil and leave it to simmer for about 5 minutes.
  2. Puree the physalis with a stick mixer.
  3. Add the egg yolk and bring it to the boil. Then turn off the heat.
  4. Mix the cornflour with 2 tablespoons of water and add this to the physalis curd. Stir well and let it cool in the fridge.
  5. Continue with the muffin batter. Wash the orange and grate the peel. Then juice the orange. Put the juice and zest in a saucepan and simmer gently for 4 minutes.
  6. Preheat the oven to 200 °C.
  7. Mix the coconut sugar, milk and eggs together. Add the orange juice mixture to it.
  8. Mix the flour, almond flour, salt, baking powder, vanilla sugar and a pinch of cinnamon into the batter.
  9. Add the sunflower oil to the batter and mix well.
  10. Remove the papery husk of the physalis and rinse the berries and add 2/3 of the physalis berries to the batter.
  11. Line the muffin molds with baking paper and put the batter into the molds. Evenly divide the remaining physalis berries on top of the muffin batter . Bake the muffins in about 15 to 20 minutes.
  12. Leave the muffins to cool down and serve with the physalis curd.
