The clafoutis is a sweet baked French pastry. This pastry is great in combination with fruit, this recipe combines the sweet dough with fresh physalis berries. For a real show stopper you can add vanilla ice cream to the warm clafoutis.


  • 300 g EAT ME physalis berries
  • 85 g flour
  • 3 eggs
  • 750 ml milk
  • 50 ml kirsch
  • 4 tbsp. sugar
  • 1 tsp. vanilla sugar
  • 1 pinch of salt
  • 1 pinch of cinnamon

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Before rinsing the berries remove the papery husks. Place the berries in a greased cake tin.
  3. Mix the eggs, milk, kirsch, sugar, vanilla sugar, salt and cinnamon.
  4. Sift the flour and add to the mixture. Mix thoroughly.
  5. Pour the mixture over the physalis berries.
  6. Bake the clafoutis for 40 minutes in the oven, then leave the cake in the baking tin to cool down for about 10 minutes.
  7. Serve slightly warm.
