A classic sweet cake with an exotic twist. Enjoy the perfect combination of the sweet flavour and the juicy texture of these irresistible fruity cakes.

Ingredients

  • 3 EAT ME pepinos
  • 1 EAT ME lime
  • 8 puff pastry sheets (from the freezer)
  • 50 g cashew nuts
  • 3 tbsp honey
  • 1 tsp vanilla sugar
  • 1 tsp cinnamon
  • 75 g sesame seeds
  • 1 egg
  • 75 g cake (about 4 slices)

Let's get to work

Preparation
  1. Pre heat oven to 200 °C.
  2. Take the puff pastry sheets out of the freezer and let them thaw.
  3. Cut the pepino vertically in half. Remove the skin and cut the flesh in equal cubes of 1 cm by 1 cm.
  4. Roughly chop the cashew nuts and crumble the cake.
  5. Mix the roughly chopped cashew nuts, the crumbled cake and the pepino pieces in a bowl.
  6. Then put the cinnamon, honey, vanilla sugar and the lime juice in the bowl as well.
  7. Spread this mixture on 4 sheets of puff pastry. Fold the other sheets of puff pastry and cut slits into it,
    without cutting right through to the end. Open up the puff pastry again and cover the sheets
    that have the filling on it. Press the two sides down with a fork.
  8. Beat the egg and brush on the pepino pastry and sprinkle with sesame seeds.
  9. Cut the pastries in half with a wet knife.
  10. Bake in the oven for about 20 to 25 minutes.
