Pearl couscous is rounder and bigger than the original couscous and is delicious to use it in a main-dish salad. This vegetarian salad is nice and fresh

Ingredients

  • 200 g EAT ME Bimi®
  • 100 g EAT ME mini corn
  • 10 g EAT ME basil
  • 175 g pearl couscous
  • 1 red pointed sweet pepper
  • 1 clove garlic
  • 50 g pitted black olives
  • 2 tbsp olive oil
  • pepper and salt

Let's get to work

Preparation
  1. Prepare the couscous according to the instructions on the packet. Immediately rinse with cold water and leave the pearl couscous to drain well.
  2. Rinse the Bimi® and cut in small pieces. Remove the heads of the Bimi® and cut the stems in small pieces.
  3. Slice the mini corn lengthwise twice.
  4. Bring a pan with 3 litres of water to the boil. Add a pinch of salt. Add the Bimi® and mini corn and boil for 4 minutes. Immediately rinse the vegetables with cold water and leave to drain well.
  5. Slice the sweet pepper in strips and cut the olives in slices.
  6. Mix the pearl couscous, Bimi®, pointed sweet pepper, olives and bay corn together carefully. Add the crushed garlic, 2 tablespoons olive oil and pepper and salt to taste to the salad. Rinse and slice the basil finely and also mix through the salad.
  7. Let the salad sit for 10 minutes, so all the ingredients and flavours are mixed in together.
