  • 4 EAT ME passion fruit
  • 1 EAT ME carambola
  • ½ EAT ME lime
  • 250 ml cream
  • ½ vanilla pod
  • 55 g sugar
  • 1½ gelatine leaves
  • 100 ml orange juice

Let's get to work

  1. Pour the cream and 30 grams of sugar in a saucepan. Slice the vanilla pod open and scrape half of the seeds out. Add the vanilla to the cream.
  2. Bring the cream to a boil over medium heat. Reduce heat to low and when the cream is boiling let it simmer for 4 minutes. Meanwhile, soak the gelatine leaves in cold water.
  3. Cut the lime in half and squeeze the juice from one half of the lime. Add the lime juice to the cream.
  4. Squeeze the soaked gelatine leaf well, making sure there is hardly any water added to the cream. Add the gelatine leaves to the cream and stir until the gelatine is dissolved.
  5. Cut 2 passion fruit in half and scoop out the jelly-like flesh. Add the passion fruit pulp to the cream mixture. Gently fold together and pour the cream mixture into two or three glasses. Put the glasses in the fridge for about 30 minutes.
  6. Then cut the remaining passion fruit in half and scoop out the jelly-like flesh. Put the flesh into a small saucepan along with the rest of the sugar and the orange juice. Bring to a boil and stir. Turn the heat off and then let the passion fruit mixture cool for at least 15 minutes.
  7. Place the passion fruit mixture into the glasses and put the glasses in the fridge for 30 minutes.
  8. Then rinse the carambola, slice the fruit horizontally and cut into 3 slices of about ½ cm to get beautiful star shapes. Cut a small incision into the slices. Add a slice of carambola to each glass.
