  • Parsnip soup with salmon

Parsnip is sometimes called a ''forgotten'' vegetable. We certainly shouldn't forget this vegetable because it has a particularly mild flavour. That's why it is a great vegetable to use in soups and combines really with the fresh apple and soft salmon.

Ingredients

  • 500 g EAT ME parsnips
  • 1 onion
  • 1 apple
  • 1 spring onion
  • 250 ml (full fat) yoghurt
  • 200 g smoked salmon
  • 1 L vegetable stock
  • 2 tbsp. olive oil
  • Pepper & salt

Let's get to work

Preparation
  1. Peel the parsnips and cut into chunks and chop the onion.
  2. Heat olive oil in a frying pan and fry the onion. Add the parsnips and cook briefly.
  3. Deglaze with vegetable stock and bring to the boil with the lid kept on the pan. Reduce heat to low.
  4. Meanwhile, cut the apple into slices and the spring onions into fine rings.
  5. Puree the soup after 20 minutes with a stick mixer until smooth.
  6. Remove the pan from the heat and mix the yoghurt into the soup.
  7. Season to taste with salt and pepper.
  8. Pour the soup into the bowls and place a slice of salmon on top of the soup and add the spring onion and apple.
