Ideal for Christmas dinner! Parsnip is a good substitute for potato and has a nice and subtle taste.


  • 1 kg EAT ME parsnip
  • 250 ml cream
  • 125 ml milk
  • 2 eggs
  • 1 tsp herbes de Provence
  • 1 tbsp. flour
  • 1 garlic clove
  • dab of butter
  • salt & pepper

Let's get to work

  1. Preheat the oven to 160 °C.
  2. Grease an oven dish with butter.
  3. Peel the parsnips and cut into thin slices. Place fanwise in the oven dish.
  4. Squeeze the garlic with a garlic press and mix with the cream, milk and eggs. Then add the Provencal herbs and the flour and season with pepper and salt.
  5. Pour the mixture into the oven dish and cook in the oven for about 35 minutes until done.
