They love this papaya salad in Thailand. Deliciously fresh, sweet and spicy. Goes great with curry or as a refreshing salad at a summer barbecue.


  • 1 EAT ME golden papaya
  • 1 EAT ME lime
  • 2 cloves of garlic
  • 12 gambas
  • 200 g mixed salad greens of your choice
  • 2 tbsp. olive oil
  • Salt & pepper

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Crush the garlic with a garlic press.
  3. Marinate the gambas with garlic, olive oil and a pinch of salt.
  4. Roast the gambas for 12 minutes in the oven, let them cool down.
  5. Cut the lime in half. Squeeze the juice from the fruit.
  6. Cut the papaya vertically in half. Remove the seeds with a spoon. Cut one half of the papaya into thin strips and puree the other half with 1 clove of garlic and lime juice into a dressing.
  7. Divide the lettuce and add the gambas and papaya slices. Drizzle with the dressing.


To make the salad extra spicy, add thin slices of cayenne pepper or rawit chilli.
