A generously filled omelet with crispy, stir fried mini paksoy. Great for lunch!

Ingredients

  • 2 EAT ME mini paksoy
  • 100 g shiitake
  • 1 red bell pepper
  • ½ leek
  • 1 shallot
  • 1 clove of garlic
  • 3 eggs
  • 3 tbsp. oyster sauce
  • 1 tbsp. olive oil
  • 2 pieces of butter
  • pepper & salt

Let's get to work

Preparation
  1. Halve the bell pepper and remove the seeds. Slice the bell pepper in thin strips and slice the shallot finely.
  2. Slice the leek in strips. Then remove the stalk of the mini paksoy and cut in pieces across the width. Rinse the leek and the paksoy.
  3. Cut the shiitake in thin slices.
  4. Stir fry the cut vegetables together with the crushed garlic in a wok with the olive oil. Add the oyster sauce, pepper and salt to taste.
  5. Whisk the eggs. Pour the whisked eggs into a frying pan with butter to bake two omelets. Fold the omelets in half.
