Okra might be a vegetable that you do not use very often, or maybe you use it to put into soups for example. But have you ever thought of an okra snack? This okra tempura will amaze you. This crunchy snack full of flavour is so easy to prepare and looks great too.


  • 100 g okra
  • 4 basil leaves
  • 100 g feta cheese
  • 2 egg yolks
  • 110 g flour
  • 300 ml cold water
  • 1 Pomodori tomato
  • 70 g tomato paste
  • 1 shallot
  • 1 clove garlic
  • 2 tbsp. water
  • 1 tbsp. honey
  • salt & pepper

Let's get to work

  1. Wash the okra and cook for about 3 minutes in salted water. Rinse them with cold water and pat dry.
  2. Make a tempura batter by mixing the egg yolks, flour, salt and water together.
  3. Cut the okra open on one side and fill them gently with feta cheese.
  4. Heat the deep fryer to 180 ° C.
  5. Finely slice the shallot and pomodori tomato. Rinse the basil and chop finely. Crush the garlic with a garlic press. Mix the pomodori tomato, shallot and garlic with the tomato paste, 2 tablespoons of water, honey and a clove of garlic. Mix until you have a dipping sauce. Add salt and pepper to taste.
  6. Dip the okra in the tempura batter and fry for 4-5 minutes in the deep fryer until golden brown.
  7. Let the okra drain on a paper towel.
  8. Serve okra with the tomato dipping sauce.
