  • Dough
  • 150 g rolled oats
  • 90 g almond flour
  • 60 g grated coconut
  • 6 tbsp. coconut oil
  • 3 tbsp. coconut blossom sugar
  • 100 ml milk
  • 1 egg yolk

  • Filling
  • 400 ml coconut milk
  • 200 g white chocolate
  • 3 gelatine leaves

  • Topping
  • 75 g white chocolate
  • 75 g EAT ME blueberries
  • 75 g EAT ME raspberries
  • 75 g EAT ME blackberries
  • 75 g EAT ME red currants

Let's get to work

  1. Preheat oven to 170 °C.
  2. Make the dough by mixing all ingredients for the dough together until it is smooth. Grease a shallow baking tin. Place the dough in the baking tin.
  3. Bake the bottom in approximately 15 minutes.
  4. Put the coconut milk in a saucepan and heat. Add the chocolate and let it melt.
  5. Place the gelatine in cold water. Squeeze out excess water and add the gelatine leaves to the coconut milk when the white chocolate has melted. Let this mixture cool.
  6. Pour the pie filling over the bottom.
  7. Decorate the cake with the different berries.
  8. Melt the white chocolate. Make a cone using baking paper, cut off the end and pour the white chocolate in it. Decorate the cake with white chocolate stripes.
