Imagine being in the Orient with this delicious light salad. By adding rambutans to this dish it will have a fruity and exotic twist.

Ingredients

Salad

  • 10 EAT ME rambutans
  • 120 g of noodles
  • 250g peeled prawns
  • ½ red bell pepper
  • 50 g Lamb's lettuce (Mache Lettuce)
  • 2 tbsp olive oil
  • 1 clove garlic

Dressing

  • 2 tbsp olive oil
  • 2 tablespoons soy sauce
  • 1 tbsp honey
  • pepper

Let's get to work

Preparation
  1. Preheat oven to 210 °C.
  2. Crush the garlic using a garlic press.
  3. Place the prawns with garlic and olive oil in an ovenproof dish. Bake the prawns in about 10 minutes in the oven untill done.
  4. Cook the noodles according to the instructions on the packaging.
  5. Cut the bell peppers into thin strips.
  6. Score the rambutans right around and remove the skin and the kernel.
  7. Mix the olive oil, soy sauce and honey into a thick dressing.
  8. Wash the Lamb's lettuce and arrange on the plates.
  9. Then mix the noodles, rambutans, prawns and bell peppers. Spread this over the Lamb's lettuce and drizzle the dressing over the salad.
