  • Noodle salad with papaya

Imagine being in the Orient with this fruity salad. In Asia, a lot of fruit is used in savoury dishes. Therefore, add a tasty pepper to offset the sweet fruit.

Ingredients

  • 1 EAT ME Formosa papaya
  • 1 EAT ME cayenne pepper
  • 100 g EAT ME mangetout
  • 200 g noodles
  • 50 g bean sprouts
  • 1 red bell pepper
  • 1 bunch of spring onions
  • 1 red onion
  • 1 tbsp. olive oil
  • salt

Let's get to work

Preparation
  1. Put 3 litres of water in a pan and bring to the boil.
  2. Blanch the mangetout for 4 minutes in boiling water. Then take them from the pan and rinse them with cold water in a colander.
  3. Boil the noodles for 2 minutes in the same pan. Drain the noodles and rinse with cold water.
  4. Cut the papaya in half lengthwise. Remove the seeds with a spoon. Now cut the two halves with flesh into slices and then into thin strips.
  5. Slice the bell pepper and the mangetout into thin strips
  6. Rinse and cut the spring onions into small rings.
  7. Rinse the cayenne pepper, cut in half and remove the seeds. Slice one half of the pepper into very fine pieces.
  8. Rinse the bean sprouts. Then gently mix all ingredients together and add the olive oil.
