This Mexican nacho recipe is quick to make and tastes delicious too. Ideal for the weekend or if you have little time to cook.

Ingredients

  • 3 EAT ME avocados
  • 1 large carrot
  • 1 leek
  • 1 red bell pepper
  • 1 onion
  • 75 g mushrooms
  • 75 g corn kernels
  • 2 cloves of garlic
  • 750 g minced beef
  • 2 tbsp. tomato puree
  • 1 tbsp. Tex Mex seasoning
  • 1 tsp. paprika powder
  • 150 g tortilla chips
  • 150 g grated cheese
  • 2 tbsp. olive oil
  • salt and pepper

Let's get to work

Preparation
  1. Preheat the oven to 180 ┬░C.
  2. Cut the bell peppers, carrot and onion into small cubes. Cut the mushrooms into thin slices. Halve the leek and cut into rings and rinse the leek.
  3. Heat the olive oil in a frying pan. Put the carrots, peppers, mushrooms and onions in the pan and leave to cook for a while. Squeeze the garlic on top of the vegetables.
  4. Then add the minced meat to the vegetables and stir well together.
  5. Add the tomato paste, paprika powder, Tex Mex seasoning when the minced meat is done. Mix all ingredients together well.
  6. Then add the leeks and corn. Season to taste with salt and pepper.
  7. Put the minced meat mixture in an oven dish and scatter the tortilla chips over the dish. Then sprinkle the cheese on top.
  8. Put the dish in the oven for about 8 minutes.
  9. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out and cut into slices.
  10. Remove the dish from the oven and place the slices of avocado on the dish.
