  • Mini vegetables with a creamy dip

Healthy cooking does not have to be difficult or boring. These cheerful bowls full of mini vegetables are a healthy treat after a school or work day and you can even serve them as an appetizer with drinks.


  • 100 g EAT ME mini corn
  • 1 EAT ME lime
  • 15 g EAT ME basil
  • 200 g carrots
  • 1 orange
  • 200 g cucumber
  • 4 stalks of celery
  • 1 bunch of radishes
  • 200 g black olives
  • 250 g cream cheese
  • 6 slices of white bread
  • salt and pepper
  • 3 tbsp. olive oil

Let's get to work

  1. Halve the orange and squeeze the juice from the fruit. Season with salt and pepper.
  2. Cut the lime in half. Squeeze the juice from the lime in a separate bowl. Season with salt and pepper.
  3. Wash and cut the carrots lengthwise into sticks and put them in the orange juice.
  4. Rinse the cucumber, cut into sticks and remove the seeds. Place them in the lime juice.
  5. Cut the mini corn in half lengthwise and blanch briefly in a pan with boiling water. Rinse with cold water. Then mix with 1 tablespoon of olive oil, salt and pepper.
  6. Peel the celery stalks with a vegetable peeler, wash them and cut them into thin sticks.
  7. Wash the radishes, cut them in half and mix with 1 tablespoon olive oil, salt and pepper.
  8. Wash and cut the basil and mix with the cream cheese until smooth.
  9. Toast the white bread in a toaster until lightly browned.
  10. Cut rounds out of the toast and brush with 1 tablespoon olive oil. Season to taste with salt and pepper.
  11. Use a food processor to pulse the olives into a smooth paste.
  12. Now put a slice of bread in a small terra cotta pot. Put the cream cheese, the olive paste on top and insert the vegetables sticks in it.


Like bell peppers better? Or zucchini or little gem? Anything goes!

Use the leftover celery leaves for seasoning soup or stock.
