Spicy flavours from the Middle East will fill your kitchen while making these surprisingly tasty filo pastries parcels filled with many delicious ingredients. The combination of sweet, spicy, salty and tasty flavours makes this filo pastry a true taste explosion.

Ingredients

  • 1 EAT ME lime
  • 1 tsp. EAT ME cayenne pepper
  • 180 g EAT ME medjool dates
  • 15 g EAT ME chives
  • 12 long sprigs chives
  • 1 large grated carrot
  • 1 small tin of anchovies
  • 300 g soft goat cheese
  • 100 g hazelnuts
  • 100 g almonds
  • 6 sheets filo pastry
  • 2 tbsp. caraway seed
  • 80 g melted butter
  • salt and pepper

Let's get to work

Preparation
  1. Preheat oven to 200˚C.
  2. Roast the nuts and caraway seeds together for 7 minutes on a baking tray in the oven.
  3. Remove the baking tray from the oven and grind the nuts and caraway seeds until fine.
  4. Peel the carrots and grate finely.
  5. Remove the pits from the Medjool dates and cut the dates into pieces.
  6. Crumble the goat cheese.
  7. Wash the lime and dry. Grate the zest of the lime. Then cut in half. Squeeze the juice from the fruit.
  8. Mix the cayenne pepper, chives, carrots, goat cheese, nuts, dates, lime zest, lime juice and caraway seeds together. Season to taste with salt and pepper.
  9. Cut the filo pastry sheets in half, spread them out and brush each sheet lightly with butter. Continue to lay two sheets crosswise on top of each other.
  10. Place the carrot mixture on the dough and fold the dough and the filling into parcels.
  11. Close the parcels with a long sprig of chives and bake in the middle of the oven for 10-15 minutes until golden brown and crispy on a baking tray lined with baking paper.

Tips

If the tips of the dough start to turn too brown, cover them with aluminium foil.

Caraway seed has an anise-like flavour and can be bought at the supermarket. It can be replaced by cumin if necessary. Than double the amount.
