  • Meatballs in a Mediterranean sauce

Do you feel like a delicious hot meal? Surprise yourself and others with delicious meatballs in a Mediterranean sauce. The Mediterranean sauce has a tasty, spicy flavour thanks to the fresh herbs and the pepper.

Ingredients

  • 5 g finely chopped EAT ME parsley
  • 5 g EAT ME oregano
  • 5 g EAT ME thyme
  • 1 EAT ME cayenne pepper
  • 1 courgette
  • 1 yellow bell pepper
  • 1 can of tomato cubes
  • 2 garlic cloves
  • 1 chopped onion
  • ½ lemon
  • 300 g of minced meat
  • 1 egg
  • 1 tbsp. mustard
  • 3 tbsp. breadcrumbs
  • salt and pepper

Let's get to work

Preparation
  1. Cut the courgette into cubes.
  2. Cut the onion and bell pepper into cubes and remove seeds.
  3. Finely chop the parsley, oregano, thyme, cayenne pepper and 1 clove of garlic. Keep a little cayenne pepper aside for the meatballs.
  4. Heat a frying pan with olive oil and fry the onion, add the cayenne pepper, oregano, thyme, garlic, zucchini and yellow bell pepper and stir well.
  5. After about 5 minutes, add the tomato cubes and simmer for about 15 minutes. Stir well every now and then.
  6. Now add the juice and the zest of the lime and the chopped parsley.
  7. Crush a garlic clove.
  8. Put the mince in a bowl and add mustard, egg, cayenne pepper, garlic, breadcrumbs, salt and pepper and mix well. If the mince is too moist, you can add some more breadcrumbs.
  9. Make small meatballs.
  10. Heat olive oil in a pan and fry the meatballs untill brown.
  11. Add the balls to the sauce and let them simmer on a low heat.

Tip

No breadcrumbs? Use a toasted white sandwich for the meatballs.
