It often takes a lot of time to create a beautiful pie. This maracuja meringue pie looks great but it only takes one hour to make. That's nice!

Ingredients

Bottom

  • 3 EAT ME maracujas
  • 150 g flour
  • 100 g butter
  • 50 g sugar
  • 1 egg yolk
  • Pinch of salt
  • pinch of vanilla sugar
  • Confectionery cream
  • 250 ml milk
  • 60 g sugar
  • 3 egg yolks
  • 10 g vanilla sugar
  • 40 g flour

 

Meringue

  • 2 egg whites
  • 60 g sugar
  • 60 g icing sugar
  • 2 tsp cornflour
  • 2 tsp water

Let's get to work

Preparation
  1. Preheat the oven to 170 °C.
  2. Start by making the dough. Mix the butter, sugar and egg. Add the flour, a pinch of salt and vanilla sugar.
  3. Let the dough rest in the fridge for 15 minutes.
  4. Roll out the dough with a rolling pin until it is ½ centimeter thick.
  5. Grease a cake tin with butter or oil and line with the dough.
  6. Bake the bottom in the oven until done in 15 minutes.
  7. Put the egg yolks and 1/3 of the milk in a bowl and whisk until smooth.
  8. In the meantime, heat 2/3 of the milk with the sugar and icing sugar in a saucepan.
  9. While stirring, gradually pour the hot milk into the egg yolks.
  10. Pour the mixture back into the saucepan as soon as all the milk has been added.
  11. Sitrring continuously bring back to the boil until it has the required consistency.
  12. Remove from the heat and allow to cool while continuously stirring.
  13. Cut the maracujas in half and scoop out the jelly-like pulp and add to the confectionery cream. Put it in the fridge.
  14. Remove the bottom part of the cake out of the tin. Spread the maracuja cream on it and put back in the fridge.
  15. Use a lemon to degrease the mixer and the bowl.
  16. Beat the egg whites with the sugar and the icing sugar.
  17. Mix the cornflour with the water and add to the egg whites. Whisk well for 3 minutes.
  18. Sculpt the meringue into spikes and peaks on top of the cake.
  19. Torch the egg whites to get a nice toasty finish.
