A fresh salad with sweet and spicy ingredients a great way to make a small tropical party out of every dinner or lunch.


  • 2 EAT ME mangos
  • 1 EAT ME lime
  • ½ EAT ME cayenne pepper
  • 2 g EAT ME ginger
  • 5 g EAT ME coriander
  • ½ iceberg lettuce
  • 2 spring onions
  • 20 large raw shrimp
  • 2 tbsp stir-fry oil
  • 4 tbsp. unsalted peanuts
  • 1 clove garlic
  • Salt & pepper

Let's get to work

  1. Peel the shrimp, leave the tails on.
  2. Crush the garlic with a garlic press and put into a bowl.
  3. Peel and grate the ginger and add to the bowl.
  4. Halve the lime and squeeze the juice from the fruit. Add the lime juice to the ginger and garlic.
  5. Chop the coriander coarsely and add half the coriander to the mixture.
  6. Add a tablespoon of oil and some salt and pepper to taste. Mix into a marinade.
  7. Leave the shrimp to marinade for 15 minutes in the mixture.
  8. Cut the lettuce into thin strips, wash and dry in a salad spinner.
  9. Cut the mango along both sides of the stone or use a mango slicer. Then cut some strips in the seedless flesh, without cutting through the skin. Spoon the mango strips out of its skin.
  10. Remove the seeds from the cayenne pepper and clean the spring onions, cut both into thin rings.
  11. Mix the lettuce, mango, cayenne pepper and spring onions in a salad bowl.
  12. To make the dressing mix the rest of the lime juice and oil together. Drizzle over the salad.
  13. Fry the shrimp in a hot frying pan until they are pink and tender.
  14. Place them on the salad and garnish with coriander and coarsely chopped peanuts.


For a milder salad replace the red pepper by small pieces of bell pepper.
