  • 1 EAT ME mango
  • 1 EAT ME habanero
  • 5 g EAT ME ginger
  • 1 EAT ME lime
  • 1 clove garlic
  • 1 shallot
  • 3 dl water
  • 1 tbsp. brown sugar
  • ½ tsp. paprika powder
  • 1 tbsp. sweet soy sauce
  • 1 tbsp. honey
  • ½ tsp. curry powder
  • 2 tbsp. olive oil
  • salt

Let's get to work

  1. Rinse the habanero pepper, cut in half and remove the seeds. Slice the pepper into very fine pieces.
  2. Peel the ginger and finely slice the garlic, ginger and shallot.
  3. Cut the mango along both sides of the stone or use a mango slicer. Then cut some strips in the seedless flesh, without cutting through the skin. Slice in the opposite direction as well so you get a crosshatch pattern. Spoon the cubes from the mango.
  4. Heat olive oil in a pan and fry the garlic, onion and habanero pepper.
  5. Add the curry and paprika powder and fry briefly along.
  6. Add the diced mango and cook gently for about 2 minutes.
  7. Cut the lime in half. Squeeze the juice from the fruit. Add the lime juice, water, honey, soy sauce and brown sugar and simmer for about 15 minutes.
  8. Puree after 15 minutes until smooth and season with salt.
  9. Allow the sauce to cool for at least an hour.
  10. Serve cold.
