Go all out with Easter and make a delicious Easter cake! Has Easter already been? This cake is still very nice. Leave out the easter eggs and garnish with extra scoops of mango.

Ingredients

  • 3 EAT ME mangos
  • 10 g EAT ME mint
  • 250 g Bastogne biscuits
  • 100 g coconut oil
  • 500 ml low-fat quark
  • 250 ml cream
  • 8 gelatine leaves
  • 10 ml water
  • 75 g dragee Easter eggs

Let's get to work

Preparation
  1. Finely crush the Bastogne biscuits and heat the coconut oil in a small saucepan until melted. Mix the crushed Bastogne biscuits with the coconut oil and spread the biscuit mixture into the spring form cake tin. Press the mixture down firmly with the back of a spoon. Then put the cake tin in the fridge.
  2. Cut the mango along both sides of the stone or use a mango cutter. Use a melon baller to get a total of 16-18 balls from the flesh. Remove the remaining flesh from the mango skin and puree in a blender.
  3. Soak the gelatine leaves in cold water and heat the mango puree in a saucepan. Add the gelatine to the mango puree and stir until the gelatin is completely dissolved.
  4. Put the pan with the mango puree in a cold-water bath and let it cool down.
  5. Whip the cream until it has a yoghurt like consistency.
  6. Mix the cream, quark and mango puree together once the mango puree is completely cold.
  7. Remove the cake tin from the refrigerator and pour the quark mixture into the cake tin. Allow the cake to set in the fridge for at least 2 hours.
  8. Rinse the mint and take the beautiful leaves off the stalks. Decorate the cake with the little mango balls, Easter eggs and mint. Then carefully remove the springform cake tin and serve the Easter cake straight away.
