  • Mango chicken carpaccio

A good start to Christmas dinner is this easy to prepare appetizer with mango. It looks colourful and tastes deliciously fresh.


  • 2 EAT ME mangos
  • 8 cherry tomatoes
  • 8 leaves of mixed lettuce
  • 25 g pine nuts
  • 250 g smoked chicken fillet
  • 1 tbsp. olive oil
  • 8 tbsp. salad dressing

Let's get to work

  1. Roast the pine nuts in a dry frying pan until brown and let them cool down.
  2. Cut the mango along both sides of the stone or use a mango cutter. Then cut some strips in the seedless flesh, without cutting through the skin. Spoon the strips from the mango.
  3. Place alternately smoked chicken breast and slices of mango on 4 plates.
  4. Sprinkle the carpaccio with pine nuts.
  5. Cut 4 cherry tomatoes into strips and spread over the carpaccio.
  6. Equally divide the salad dressing over the 4 plates.
  7. Per plate, place 2 leaves of lettuce in the middle of the carpaccio and garnish with a cherry tomato.
