  • Mangetout pastries with shiitake

How about a tasty appetiser as an entree? This flaky puff pastry cup filled with creamy ragout made with mange tout and shiitake mushrooms is the perfect way to start your dinner.


  • 100 g EAT ME mange tout
  • 60 g shiitake mushrooms
  • 3 sheets of puff pastry
  • 100 ml cooking cream
  • 400 ml milk
  • 50 g butter
  • 60 g flour
  • 1 small shallot
  • 1 egg
  • pepper & salt

Let's get to work

  1. Preheat oven to 200°C.
  2. Remove the sheets of puff pastry from the packaging and let them thaw.
  3. Cut the largest possible circle out of each sheet using a pastry ring.
  4. Use baking paper to line a baking tray and place the pastry circles on it, brush each circle with the beaten egg yolk.
    Bake the puff pastry in the oven for about 18 minutes. Remove from the oven and leave to cool on a rack.
  5. Chop the shallot finely and slice the shiitake mushrooms.
  6. Melt the butter in a small saucepan on a medium heat, then turn the heat down and fry the shallot and shiitake for about 1 minute.
  7. Using the butter, fry the shallot and shiitake on low heat for about 1 minute.
  8. Add the flour and mix together. Let the mixture warm up slightly than add 200ml milk. Stir together until it's smooth and thickened.
  9. Then add the rest of the milk and the cooking cream. Keep stirring gently until the ragout is slowly getting to the boil, 
    now reduce the heat.
  10. Rinse the mange tout, then slice them in large pieces and add to the sauce. Allow the mixture to cook gently for another 3 minutes.
  11. Add salt and pepper to taste.
  12. Cut of the tops of the pastry cups, put them on a plate and fill them with the ragout.
