Long beans and bean sprouts are a great crispy combination for this delicious salad. The homemade dressing adds a bit of extra flavour.

Ingredients

  • 200 g EAT ME long beans
  • 40 g bean sprouts
  • 1 clove of garlic
  • 1 red bell pepper
  • 1 shallot
  • 1 piece of butter
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp ginger syrup
  • Little bit of chillie paste
  • pepper & salt

Let's get to work

Preparation
  1. Rinse the long beans and cut into small pieces. Dice the shallot and the garlic finely.
  2. Fry the shallot and the garlic with a piece of butter for 2 minutes in a wok.
    Add the long beans and stir fry for another 3 minutes on high heat.
  3. Then turn the heat down and simmer gently for 5 minutes. Let the long beans cool down.
  4. Halve the bell pepper and remove the seeds. Cut in small pieces.
  5. Make the dressing by mixing the olive oil, soy sauce, ginger syrup and a little bit of chillie paste.
  6. Bring to taste with pepper and salt.
  7. Combine the long beans, bell pepper pieces and bean sprouts in a salad bowl and add the dressing.
