Start your day with a pie. Not really a pie, but it tastes like a pie. Lime pie is wonderfully fresh and sweet. We have turned a popular pie into a healthy breakfast!



  • 2 EAT ME limes
  • 1 EAT ME avocado
  • 1 dl (organic) apple juice
  • 1 dl coconut milk
  • 3 tbsp. maple syrup
  • 3 tbsp. chia seeds


  • 4 tbsp. coconut cream- see below how to prepare
  • 1 tbsp. coconut blossom sugar

Let's get to work

  1. Put a can of coconut milk in the fridge for at least 12 hours. As a result, the water and the cream will separate from each other.
  2. Open the can of coconut milk and use a spoon to skim the top layer and put in a bowl. Beat it with coconut blossom sugar. This is the coconut cream.
  3. Cut the lime in half and squeeze the juice from the fruit or use a fork.
  4. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Use a spoon to remove the stone. Peel the avocado and scoop the flesh out and put in food processor.
  5. Then add the lime juice, the remaining coconut milk, apple juice and maple syrup. Puree this until smooth. Then mix the chia seeds through the mixture.
  6. Divide this over 2 glasses and put it in the fridge at least 1 hour.
  7. Decorate the glasses with coconut cream and sprinkle coconut blossom sugar on top.
