  • Lime chicken breasts with avocado salsa

Tender chicken is always delicious. Why don't you give this chicken marinated in lime juice a try? It has a lovely fresh flavour. Together with lots of avocado salsa and you will have a ball. Add some wraps and black beans and you have a Mexican dish.

Ingredients

  • 2 EAT ME avocados
  • 3 EAT ME limes
  • 1 EAT ME cayenne pepper
  • 15 g EAT ME coriander
  • 4 chicken breasts
  • 50 g rocket
  • 1 clove garlic
  • 3 tsp. soy sauce
  • 1 tsp. honey
  • 1 tsp. olive oil
  • ½ tbsp. balsamic vinegar
  • pepper & salt

Let's get to work

Preparation
  1. Use a garlic press to crush the garlic. Cut 2 limes in half, squeeze or use a fork to get the juice out. Mix the soy sauce, the honey, lime juice and garlic in a shallow dish.
  2. Marinate the chicken for at least 30 minutes in the fridge.
  3. Preheat oven to 180 °C.
  4. Sear the chicken breasts on both sides in a hot grill pan. Place the chicken breasts in an oven dish and bake in the oven for 10 minutes until done.
  5. In the meantime, make the avocado salsa. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Use a spoon to remove the stone. Peel the avocado or scoop the flesh out.
  6. Put the avocados in the food processor. Cut the left over lime in half. Squeeze or use a fork to get the juice out. Rinse the pepper, cut in half and remove the seeds. Chop the pepper into very fine pieces.
  7. Add the coriander, rocket, pepper, lime juice and the balsamic vinegar.
  8. Mix the salsa by using the food processor and chopping it coarsely. Keep the salsa a bit on the coarse side.
  9. Take the chicken breasts from the oven and serve with the avocado salsa, wraps and black beans.
