Lentils are versatile and delicious as a side dish. This recipe combines a lentil dish with a crunchy, tasty piece of fish. Ideal if you want to put something special on the table during the week.

Ingredients

  • ½ EAT ME cayenne pepper
  • 2 tbsp. EAT ME flat leaf parsley finely chopped
  • 250 g green lentils
  • 2 fresh bay leaves
  • 3 celery stalks
  • 2 shallots
  • 3 carrots
  • 1 small leek
  • 1000 ml vegetable stock
  • 1 glass of white wine
  • 2 slices of cod (150 g each)
  • 3 slices pancetta
  • 4 tbsp. olive oil
  • 20 g butter

Let's get to work

Preparation
  1. Rinse the lentils, partially cook them for about 8 minutes and strain them. This ensures that it doesn't look too murky.
  2. Cut the leek and the shallot in half rings. Rinse them with water.
  3. Cut the carrots into small cubes and the celery in half moon shapes.
  4. Halve the cayenne pepper, remove the seeds and chop finely.
  5. Take a large pan and fry the shallot, celery, leeks, bay leaf, carrot and cayenne pepper in 3 tablespoons of olive oil.
  6. Meanwhile, warm up the vegetable stock.
  7. Add the lentils to the vegetables, deglaze with the white wine and add a spoon of stock. Stir well. Put on medium heat and occasionally add some stock if necessary.
  8. Put three slices of pancetta on top of each other, slightly overlapping
  9. Rub salt and pepper on the cod slices and then roll them together in the pancetta slices.
  10. Heat the olive oil in a frying pan and turning it once or twice, fry the cod wrapped in pancetta, until golden brown. Last but not least add the butter. This ensures that the fish turns golden brown.
  11. Spoon the lentils in a deep plate and put the cod on top.
  12. Finish off with the finely chopped flat-leaf parsley, some salt, freshly ground pepper and a drizzle of olive oil.

Tip

The most delicious lentils are 'Du Puy' lentils. They are small and remain pretty solid.
