  • Lentil salad with sugar snaps

If you want to eat less meat and carbohydrates, then this quick main-course salad made with lentils is just perfect. The surprising ingredients in this salad are the delicious sweet and crunchy sugar snaps.


  • 150 g EAT ME sugar snaps
  • 15 g EAT ME basil
  • 1 EAT ME lime
  • 100 g shiitake mushrooms
  • 150 g (green) lentils
  • 25 g pine nuts
  • ½ red bell pepper
  • ¼ yellow bell pepper
  • 1 onion
  • 1 large carrot
  • 1 tbsp. olive oil
  • 1 clove garlic
  • pepper & salt

Let's get to work

  1. Preferably soak the lentils for about 4 hours in cold water and then rinse them in cold water.
  2. Put the lentils in a pan, bring to the boil and leave to simmer for 45 minutes.
  3. Preheat the oven to 200 ˚C.
  4. Slice the onion, yellow and red bell pepper in ½ cm cubes. Rinse the shiitake mushrooms and cut in quarters.
  5. Place the onion, bell peppers and the shiitake mushrooms in an oven dish and sprinkle olive oil on top. Squeeze the garlic and add to the vegetables.
  6. Grill the vegetables in the oven for 15 minutes. Add the pine nuts, 5 minutes before the end so they will turn golden brown.
  7. Peel the carrot and cut lengthwise. Slice the carrot diagonally in thin slices.
  8. Bring a pan with water and salt to the boil. Blanche the sugar snaps and the carrots in about 2 minutes. Rinse the sugar snaps and the carrots with cold water immediately and leave to drain in a colander.
  9. Rinse the basil and cut finely.
  10. Drain the lentils when they are done and rinse with cold water immediately. Leave the lentils in a colander until drained well, then put them in a large bowl or dish. Mix the lentils with the grilled vegetables, sugar snaps, carrots and pine nuts.
  11. Cut the lime in two. Squeeze the juice by hand or use a fork to squeeze the juice out. Add the juice and the finely cut basil to the salad.
  12. Add pepper and salt to taste.
