Kumquat iced tea

Nothing beats a nice drink of ice-cold tea on a hot summer day, but of course it has to be homemade. Try it yourself with this recipe for iced tea with kumquats and lime. Refreshing tasty!

Ingredients

Iced thea

  • 160 g caster sugar
  • EAT ME Kumquats Product photo
    8 kumquats
  • 2 Earl Gray tea bags
  • 2 tbsp honey or agave syrup
  • EAT ME Limes Product photo
    2 limes
  • 3 sprigs of fresh mint

Preparation method

  1. Bring 100 ml of water with 100 g of caster sugar to the boil in a large saucepan. Add the kumquats, then leave the mixture to simmer gently for about 15 minutes. Keep an eye on the pan and add extra hot water if there is not enough water in the pan. Leave the kumquats to cool to room temperature in the syrup. Then place in the freezer.
  2. Make 2 litres of Earl Gray tea. Do not make the tea too strong. Add the rest of the sugar and honey. Leave to cool in the refrigerator for 10 mins.
  3. Slice the limes into wedges. Add them to the cooled tea with the mint and the kumquats. Place in the fridge for at least 1 hour to let the flavours develop.
