Pancake mix:
  • 1 EAT ME lime
  • 250 g buckwheat flour
  • 3 eggs
  • 2 tsp. baking powder
  • 2 dl. (almond) milk
  • ½ tsp. vanilla sugar
  • ½ tsp. cinnamon
  • coconut oil for baking
  • salt

Yoghurt mixture:
  • ¼ liter Greek yoghurt
  • 1 tbsp. honey

  • 3 EAT ME kiwis
  • 50 g slivered almonds

Let's get to work

  1. Separate the eggs and beat the egg whites firmly.
  2. In a separate bowl mix the egg yolks together with the milk.
  3. Add the buckwheat flour and baking powder and stir until smooth.
  4. Rinse and zest the lime. Add the lime zest, salt, vanilla sugar and cinnamon to the batter.
  5. Fold the egg whites into the batter.
  6. Heat a frying pan and toast the almonds until golden brown and then cool.
  7. Heat the coconut oil in a frying pan and fry the pancakes on both sides until golden brown.
  8. Mix the yoghurt and honey together well.
  9. Peel the kiwis and cut into slices.
  10. Place the kiwi slices, yoghurt mixture and the sliced almonds on top of the pancakes.
