  • 4 EAT ME kiwis
  • 1 EAT ME lime
  • ΒΌ pack Bastogne biscuits
  • 100 g butter
  • 400 g cream cheese
  • 50 ml cream
  • 100 g icing sugar

Let's get to work

  1. Grind the Bastogne biscuits in a blender or chop the biscuits coarsely.
  2. Put the butter in a saucepan and let it melt.
  3. Add the biscuit crumbs to the butter when the butter is melted. Mix everything together well and then remove from the heat.
  4. Put 4 small round molds on a tray that fits in the fridge. Place the biscuit crumbs in the 4 molds and press well. Then put the molds in the fridge.
  5. Whip the cream and put it aside for a while.
  6. Now whip the cream cheese with the icing sugar. Halve the lime and squeeze the juice into the cream cheese.
  7. Fold the whipped cream into the cream cheese.
  8. Peel two kiwis and cut into slices.
  9. Remove the molds from the fridge and press the kiwi slices against the side of the molds.
  10. Now put the cream cheese filling in the molds. Then let the cheesecakes harden in the fridge for at least 2 hours.
  11. Take the molds from the fridge after 2 hours and carefully remove the cheesecakes.
  12. Peel the other two kiwis and cut into small cubes.
  13. Scatter the kiwi cubes on top of the four cheesecakes.
