Preparation method

  1. Slice the kiwano lengthwise, scoop the flesh out of the skin and place in a bowl.
  2. Halve the sweet pepper, remove the seeds and slice the flesh into 5 mm cubes. Thinly slice the garlic. Finely chop the onion. Remove the seeds from the tomato and finely slice the flesh into 5 mm cubes. Halve the cayenne pepper lengthwise, remove the seeds and finely slice the flesh. Add all the ingredients to the kiwano.
  3. Finely chop the coriander and basil leaves and add. Squeeze the lime. Season the salsa with lime juice, honey and salt.

Tip: Serve the salsa with tacos, iceberg lettuce and strips of steak. Or with grilled chicken and grilled corn cobs.
