  • Japanese noodles with ginger and vegetables

A quick, healthy and easy meal. Who doesn't want that? Japanese noodles are a delicious vegetarian main meal, but you can also serve it as a side dish accompanied by tasty Asian meat and vegetable dishes.

Ingredients

  • 100 g EAT ME ginger
  • 1 EAT ME rawit chilli
  • 100 g leek
  • 10 g celery leaves
  • 100 g large carrot
  • 1 onion
  • 1 clove garlic
  • 250 g Japanese egg noodles
  • 2 tbsp. sunflower oil
  • Salt or 1 vegetable stock cube.

Let's get to work

Preparation
  1. Boil the noodles in plenty of water (2 litres) with salt or 1 vegetable stock cube. Rinse the noodles with cold water when they are done. Leave the noodles to drain well.
  2. Slice the onion in half rings and chop the garlic in small pieces. Peel the carrot, slice thinly and then cut into thin strips. Grate the ginger.
  3. Slice the leek in half and rinse, then cut into half rings
  4. Chop the celery leaves finely and rinse them.
  5. Rinse the rawit chili and remove the seeds. Chop the chili very finely.
  6. Heat the oil in the wok and stir-fry the garlic, ginger, onion and carrot for 2 minutes.
  7. Then add the leek and celery leaves and stir-fry for another minute.
  8. Next add the soy sauce to the vegetables.
  9. Add the cooked noodles when the vegetables are done and mix together gently.
  10. Stir-fry everything for another 2 minutes and serve in a nice bowl.
